Vegan Pumpkin Protein Pancakes
Woke up this morning craving pancakes. It's been over a month that I've tried experimenting with vegan pancake mixes as they were all failures. I have a sensitivity to eggs, so becoming creative in the kitchen has helped me not resort to eggs and getting sick.
I came up with this Vegan Pumpkin Protein Pancake.
Ingredients:
1/3 cup canned pureed pumpkin
2 tbsp unsweetened applesauce
1/2 cup almond milk (or any other milk)
1 tsp vanilla extract
1/4 tsp pumpkin pie spice
1/8 tsp salt
1 tsp baking powder
4 tbsp Chick Pea Flour
2 tbsp Organic Coconut Flour
1 scoop French Vanilla Neo Cell Sport Protein Powder
1 packets stevia (optional)
1 tsp oil (for frying)
Directions:
1. Add pumpkin, applesauce, almond milk and vanilla to a bowl and whisk until smooth.
2. Mix dry ingredients (spices, salt, baking powder, flours and protein powder) in a mixing bowl.
3. Pour blended wet ingredients into dry and mix.
4. Heat oil on a pan and add batter onto griddle
5. Flip when Ready!
A lot of you have asked if I count calories and I don't b/c basically I eat clean. Which means nothing is processed. But since there are a lot of ingredients in this recipe I tried to calculate the breakdown
I made 4 pancakes- so for this recipe, here's the breakdown
355 calories
42 gr protein
6 gr sugar
23 gr carbs
