Layered Portabella Mushrooms Omelette
Hey Everyone!
I've been non stop running around since back from our Jamaican Trip And FINALLY had some downtime this morning, which meant I had time to create a delicious breakfast. A Layered Portabella Turkey Spinach Egg White Omelet w/ a blueberry blackberry chia jam.

Ingredients
One Medium Portabella Mushroom
1 cup of spinach
1/3 egg whites
1 slice of deli turkey
I grilled the Portabella Mushroom on our grill for 3 mins. While that was cooking, I added the spinach to a pan and then the egg whites. You can go CRAZY with the layering!
For the Jam
1/4 cup of blueberry
4 blackberries
1 scoop chai seeds
I got the idea from my fellow Fitfluential Casey from PowerCakes
Basically microwave the fruit for 30 secs, mash with a fork, add the chia seeds and let it cool down.
