Vegan Gluten Free Peanut Butter Oatmeal Muffins!
*Note T= Tablespoon
- 1/2 banana
- 1/2 unsweetened almond milk
- 1/3 cup Gluten Free oats
- 2 T Coconut Flour
- 1/2 t baking powder
- 2 T pb2
- 1 t cinnamon
Blended it all together and put them into muffin tins. 350 degrees for 25-30 mins!
Now for the topping
- 1 T coconut oil
Sooooo- I've been so bored of my oatmeal vegan cookies that I went on a mission to create a new recipe! No Bake Chocolate Black Bean Protein Balls! They can easily be made vegan by choosing a vegan protein. These are gluten and lactose free.

Vegan Gluten Free Peanut Butter Chocolate Chip Oatmeal Cookies
3 mashed bananas
1/3 cup unsweetened apple sauce
2 cups Gluten Free Oats
1/4 cup unsweetened almond milk
4 Tablespoons Peanut Butter
2 Tablespoons Flax Seeds
1/2 cup Enjoy Life Dairy and Soy Free Chocolate Chips
1/2 chopped up Dates
1 tsp vanilla
1 tsp cinnamon
Line a pan with parchment paper
Bake at 350 for 15-20 mins
Cool and Enjoy!
Such a simple healthy recipe! Peanut Butter Bacon Cookies- Gluten free
1 cup unsalted added Peanut Butter- I used Trader Joes
2 Tablespoons raw honey
1 teaspoon baking soda
4 slices of bacon, cooked, cooled and diced
Mix the everything together then add the bacon.
Line a cookie sheet with parchment paper, roll the mix into balls and use a fork to flatten. Bake at 350 degrees for 10 mins and then enjoy!
Up early this morning and was in the mood to experiment! I made Peanut Butter Banana Oat Protein Breakfast Cookies. They are gluten and egg free! Using Neocell Sport in French Vanilla. They are gluten and lactose free. I tried to make a recipe that would be one serving. I also wanted to make sure I liked them before I made more! You could make them smaller, but I liked them big and made a sandwich with apples baked in coconut oil.
By far one of the best cookies I've made! You could easily make this vegan by using a vegan protein powder and substituting the honey with agave or maple syrup. Neocell Sport in Belguim Chocolate is a gluten and lactose free whey protein. It also helps with muscle and joint recovery because there's collagen in it. I love it!
This serving will make 2 large cookies or 3 smaller ones
- 1/2 avocado
